Fish Tacos

Any time we are craving some sort of Mexican food, we make some fish tacos! You can use any fish you would like. I usually choose whichever is the least expensive. Lately, tilapia has been my fish of choice.

I found this recipe from Paula Dean’s boy, Bobby, on the food network. It is simple and quick!

  • Butter cooking spray
  • 4 (6 to 8-ounce) tilapia fillets
  • Salt and freshly cracked black pepper
  • 1 lime, finely grated zest and juice
  • 2 tablespoons butter

Preheat oven to 375 degrees F. Coat a large pan with a nonstick butter spray.

Rinse fish and pat dry; place on the prepared baking sheet. Season each fillet with salt, cracked pepper, lime zest and lime juice. Add fish to the pan. Place a pat of butter on each fillet and cook in the oven for 8 to 12 minutes.

After the fish are cooked you can put together your tacos or eat the fish as they are!

Using corn tortillas or cabbage leaves place fish in the center. Add avocados, tomatoes, onions, Texas Pete, lime juice, and whatever else you would want to make your taco the BEST!

(When using corn tortillas, I put cabbage on my taco to give it a little crunch!)
