Asparagus Soup

Danny loves soup and I don’t. So, on special occasions, being the wonderful wife that I am, I will attempt to make soup. I botched the first couple of tries (that is why you have not seen any soup posts) and then I found an excellent Asparagus Soup recipe. Dairy free, Gluten free, sugar free…. perfect. and surprisingly delicious.

This recipe makes a lot so if you don’t need leftovers just cut the ingredients in half.


1 3/4 # of asparagus (remove woody stems)

olive oil

2 medium white onions (peeled and chopped)

2 sticks of celery (trimmed and chopped)

2 leeks (trimmed and chopped)

2 quarts of good quality stock (i used chicken)

sea salt

ground pepper


Chop tips of asparagus and set aside. Chop asparagus stalks. Get a large deep pan on the heat and add a glug of olive oil. Fry onions, celery and leeks ~10 min, until soft without browning. Add chopped asparagus stalks and stock. Simmer for about 20 min with lid on pan. Remove from heat mix with blender. Season soup with salt/pepper to taste. Put soup back on heat, place asparagus tips into mixture and heat until soft.

We also poached a few eggs and put the eggs into our soup bowls. This was delicious! It was great for breakfast, lunch and dinner.
